Chocolate Chip Pumpkin Cookies with SayGhee

Soft, cake-like pumpkin cookies made with SayGhee Original Ghee, packed with cozy fall flavor and melty chocolate chips — topped with a sweet vanilla glaze.

 

Ingredients:

  • 2¼ cups all-purpose flour
  • 1½ tsp pumpkin pie spice
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup SayGhee Original Ghee
  • 1 cup granulated sugar
  • 1 can (15 oz) pure pumpkin
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups semi-sweet chocolate chips

 

Instructions:

  1. Preheat the oven to 375°F and grease or line baking sheets.
  2. In a medium bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat together 1 cup of SayGhee Original Ghee, pumpkin, and sugar until smooth and creamy.
  4. Add the eggs and vanilla extract, and beat until fully combined.
  5. Gradually mix in the dry ingredients, then fold in the chocolate chips.
  6. Drop dough onto prepared baking sheets using a rounded tablespoon.
  7. Bake for 15–20 minutes, or until the edges are lightly golden.
  8. Let cookies cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
  9. While cookies cool, prepare the glaze: whisk together powdered sugar, milk, and vanilla extract until smooth.
  10. Drizzle glaze over cooled cookies and let set before serving.
