A fragrant, fluffy citrus cake enriched with Original SayGhee and finished with a dusting of powdered sugar. Bright, buttery, and beautifully moist.
Ingredients:
- 1 cup SayGhee Original Ghee
- 2 cups all-purpose flour
- 1¼ cup sugar
- 1 tsp salt
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp almond extract
- 3 eggs, room temperature
- 1¼ cup whole milk (or non-dairy milk), room temperature
- Zest of 2 large oranges
- 2 tbsp fresh orange juice
- 4 tsp powdered sugar (for dusting)
Instructions:
- Preheat oven to 350°F. Grease and flour a 9-inch cake pan.
- Melt ghee and set aside.
- In a large bowl, rub orange zest into sugar until fragrant and sandy.
- Add eggs and whisk until thick and smooth.
- Slowly add melted ghee while whisking. Stir in almond extract, milk, and orange juice.
- Add flour, baking soda, baking powder, and salt. Mix until fully incorporated.
- Pour into prepared cake pan and smooth the top.
- Bake for 45–55 minutes, until deep golden and a toothpick comes out clean.
- Let cool in the pan for 10–15 minutes, then transfer to a rack to cool completely.
- Dust with powdered sugar before serving. Optional: serve with whipped cream or berries.
