Ingredients:
- For the Pancakes (Makes ~4 small pancakes / Serves 2):
- ½ cup rolled oats or oat flour
- ½ cup Greek yogurt or plant-based yogurt
- 1 large egg
- ¼ tsp baking soda
- Pinch of salt
- ½ tsp vanilla extract (optional)
- Splash of milk or plant-based milk (to adjust consistency)
- For the Ghee-Sautéed Peaches:
- 1–2 ripe peaches, thinly sliced
- 1 tsp SayGhee Original Ghee
- ¼ tsp ground cinnamon
- ½ tsp honey or maple syrup (optional)
Instructions:
- Blend oats, yogurt, egg, baking soda, salt, and vanilla until smooth.
- Let the batter sit for 5–10 minutes to thicken. Add a splash of milk if needed.
- Heat a non-stick skillet and lightly grease with SayGhee or oil.
- Pour batter to form small pancakes.
- Cook for 2–3 minutes on each side over medium heat, until golden and fluffy.
- In a separate pan, melt 1 tsp SayGhee over medium heat.
